Dough Nuts
For bakers who are nutty about sourdough.
Dough Nuts is a calculator for sourdough formulas. Tell it how many loaves you are baking and how much flour goes into each one, and it works out every weight in grams using baker's percentage: the flour, water, salt, starter, and any add-ins. It runs on iPhone and iPad, and on Apple silicon Macs.
What it does
- Works out the whole formula. White, whole wheat, or mixed flour, with water, salt, and starter as percentages of the flour.
- Builds your starter. The kickstarter and starter amounts for each step.
- A library of flavors. More than 60 included flavors, such as olives and rosemary. Search them, star your favorites, adjust any one, or build your own. See the list of flavors.
- Checks the bake. Warns when the flour is more than your mixer holds, and suggests a banneton size for each loaf.
- Shares or prints the formula when you are ready to bake.
